Coconut Curry Fried Rice

Ingredients

1 c. shredded coconut

1/2 onion

3 cloves garlic

1 1/2 c. cooked chickpeas

1 c. chopped broccolini

1/2 red bell pepper

chile oil

1 1/2 c. cooked rice

1/4 c. roasted peanuts

1 Tbs curry powder

2 Tbs. soy sauce

Directions

1. Prepare rice.
2. Dice onion and bell peppers; press garlic.
3. Chop broccolini to similar sized pieces. Measure out curry powder and soy sauce.
4. Toast coconut in chili oil. Set aside.
5. Stir fry onions and garlic in fresh chili oil over medium heat until onions start to look translucent, about 2-3 minutes.
6. Add chick peas, bell pepper and broccolini. Sautee for 2-3 minutes.
7. Add peanuts, rice, curry powder and soy sauce. Stir and sautee another 2-3 minutes.
8. Add the toasted coconut, saving some for garnish.
